Recipe Tuesday: Leftover Turkey Gumbo

With the holidays, comes with a lot of planning, preparation and leftovers. UP Health System – Portage Registered Dietitian Nutritionist Taylor Paul, shares a quick and easy leftover Turkey Gumbo for you and your entire family to enjoy.
Ingredients
- 4 cups unsalted turkey and chicken stock
- 1/8 tsp. ground allspice
- 1/8 tsp. ground cinnamon
- 1/8 tsp. ground coriander
- 1/8 tsp. ground smoked paprika
- 1/8 tsp. ground cayenne pepper
- 1/8 tsp. ground pepper
- ¼ cup canola oil
- ¼ cup purpose four
- 1 medium chopped onion
- 1 ½ tsp file powder
- 2 bay leaves
- ¼ tsp. salt
- 1 medium chopped red pepper
- 1 medium chopped poblano pepper
- 3 cloves garlic, minced
- 1 (15oz) can of diced tomatoes
- 2 cups shredded, cooked turkey
- 8oz chopped andouille sausage
- 4oz sliced okra
- 1 tbsp. fresh chopped thyme
- 2 stalks of chopped celery
- ½ tsp. Worcestershire sauce
Preparation
- Bring stock to a simmer in a large pot.
- Combine allspice, cinnamon, coriander, paprika, cayenne and pepper in a small bowl.
- Heat oil in a large skillet over medium-high heat. Whisk in flour and season with a pinch of salt.
- Cook, stirring often, until roux is very brown, 2-4 minutes. Add celery, onion, bell pepper, and poblano. Cook, stirring occasionally for 3 minutes. Add garlic, and cook stirring for 1 minute. Add spice mixture, and cook, stirring for 1 minute. Whisk roux and vegetables in the hot broth until combined. Add tomatoes, turkey, sausage, okra, thyme, bay leaves, file powder, Worcestershire sauce, and remaining salt.
- Bring to a simmer.
- Reduce heat to maintain a simmer, and cook for 30 minutes.
