Recipe Tuesday: Carrot Cake Slow Cooker Oats

The perfect holiday dessert to share with you and your family during this holiday season. Taylor Paul, Registered Dietitian Nutritionist, shares a quick, easy, and healthy slow cooker oats recipe.
Ingredients
- 1 ½ cups steel-cut oats
- 1 cup unsweetened almond milk (or milk of choice)
- 2 cups water
- ¼ cup low-fat cream cheese
- 3 tbsp. ground flaxseed
- 2/3 cups grated carrots (4-5 whole carrots)
- 2-3 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. vanilla extract
- Optional toppings: walnuts, raisins, shredded coconut
Preparation
- Grate carrots using a cheese grater or food processor
- Add all ingredients, except for toppings, into the slow cooker
- Turn the slow cooker to the low setting and cook for approximately 6-8 hours
- Eat and enjoy!
